For IR56B, I want to add additional pay data which is not captured in my pay runs. How can I do that?

Go to ePayroll > Payroll Setup > Tax Opening Balance

Add the figures in the respective fields, after that, click 'update'.

If you have a lot of data to key in, you can also click ‘Import Opening Balance’, download the template and upload it with the relevant data.
